Creme de Menthe bar recipe


These are one of my all time favorite desserts that my mom used to make for me as a special treat. I've had a few requests for the recipe, so I thought I'd share. =)
Layer 1 (bottom)
Melt 1/2 cup (1 stick) of Margarine in pan
Add 4 TBSP cocoa (not Nestle's, real cocoa powder)
1/2 cup powdered sugar
1 beaten egg
1tsp vanilla
2 cups (12 whole crackers) graham cracker crumbs
1 cup coconut (shaved - you get this in bags)
***I've had quite a few people tell me they don't like coconut. This batch I made without the coconut, and I just added more (1/2 cup maybe) graham cracker crumbs. However, I don't normally like coconut, but I like it in this recipe.
Press into 9X13 pan, and stick in freezer.
Layer 2 (middle layer)
Melt 1/2 cup margarine in pan
Add 3 TBSP creme de menthe (this is a green liquor for those that don't know)
2 TBSP instant vanilla pudding
2 cup powdered sugar
Then spread over 1st layer in 9x13 pan and put back in freezer
Layer 3 (top layer)
***Make sure that the 2nd layer is frozen before you add the 3rd layer on it.
Melt 1/2 cup margarine in pan
Add 1 cup of semi sweet chocolate chips
Then spread over 2nd layer.
Wait until they're all the way frozen and then cut into 1.5" squares. They're pretty rich so you don't want to make them into too big of bars. Although if I did that I guess I could eat one of them instead of like 4 at a time... =)
